The pulses are harvested only after they have been dried naturally in the sun, because artificial drying would shrivel up the skin causing it to rupture and leaking valuable starches. That never happens with our pulses!

We believe that the pulses that we pack in our jars are simply the best.

The aim of our study stage focused on pulses in broth was to obtain a tasty, very soft product that at the same time would have the velvety, creamy texture typical of pulses and would boast compact, individual grains. But we also wanted a product that would be of use in both winter, as a soup, and in summer, as a salad ingredient.
Our pulses in broth thus came into being. The broth is an important part: made using organic vegetables, this broth is no simple preserving liquid, because it adds flavour to soups and when blended together with the pulses produces an excellent cream that can be eaten just as it is or drizzled with oil and seasoned with pepper. If you want to eat them in the summer, these pulses can be drained and will make all your cold salads delicious and very filling, adding a soft, rich touch.

Our pulses (chickpeas, borlotti beans, cannellini beans and lentils) are grown on small, family-run organic farms and not using large-scale industrial methods. Crops are rotated to preserve the soil’s fertility and are grown without using synthetic fertilisers or pesticides. The pulses are harvested only after they have been dried naturally in the sun, because artificial drying would shrivel up the skin. They are then processed in a manufacturing plant, where the wastes are turned into animal feed. In turn, the manure of these animals is composted and used to fertilise the fields.

The pulses are cooked at low temperature in a vegetable broth produced from organic vegetables and without using artificial stock powder. They are then placed by hand in jars and covered with warm broth. It is especially important at this stage not to subject the pulses to sudden changes in temperature, because this would cause the skin to rupture and the starches to leak into the broth.

The jars are then sealed and gradually brought to temperatures suitable for sterilisation.

The result is a product that is ready to eat, including the broth, and that is delicious and nutritious. If you plan to drain out the broth and use the pulses to prepare salads, we recommend that you put the broth aside and use it later to prepare soups and stews.
